Beth Ingram “A Spanish Tapas Night for Beth”

DREAM WRITE UP: Beth Ingram

A Dream Made Special

The below is Beth’s Dream, written in the words of her friends:

On the 21st of October 2025, one of my long-time friends Beth, was faced with the knowledge she was looking at just a couple of months to live after battling metastasised breast cancer, that had spread to her collar bone and most recently in her liver. She’s fought his horrific disease so hard for many years now and it was sadly, finally starting to win this battle.

After hearing about Evestrust and being in contact with one of their Dreams Coordinators, we set to trying to organise Beth a weekend away, that could fully accommodate her needs and current condition. Ideally, we were looking to stay in a beautiful and relaxing lodge, with a hot tub, while to tried to factor in as many of her loves as possible. We decided on beautiful place in Kenwick Woods, near Louth. However, we needed it sooner rather than later as we wanted Beth to be as well as possible, so she could enjoy the whole experience. Something that thanking Evestrust were able to do, booking it for the 7th of November 2025. We have to admit, the lodge and its surroundings were beautiful and peaceful.

One of the additional things we wanted to factor in was Beth’s love for Spain and the Spanish food, but we knew she may not be able to face going to some of the restaurants that were suggested. Incredibly, Evestrust (Baileigh) found us a Spanish Tapas Chef who was willing to come to the lodge and cook for our party of 6 and make it a fully personal and special experience, and what a great find she was!! Betty (chef) and her mum arrived at the lodge on Saturday evening, with their bubbly, friendly personalities and provided us with a beautiful tapas meal!! Betty from Castiza in Lincoln.

We then added some treatments for Beth in the beautifully presented Kenwick Spa, where the Oncology trained ladies gave Beth some incredible treatments.

I, or should I say we, would all like to thank everybody involved at Evestrust and everybody who has supported the charity to enable them to help people like Beth. We especially would like to thank our Dreams Coordinator Baileigh, who went above and beyond in her attempts to accommodate Beth’s needs and making it such a lovely, personalised trip. To the point Beth kept saying herself “It feels like a dream, I feel so special, I can’t believe they’ve done all of this for me, I feel so special” When to take in to account it was all organised at such short notice, it could not have been better.

We all can’t thank you enough. Thank you from the bottom of our hearts.

A big thank you to Betty at Castiza and to Laura Daykin Independent travel agent.
